{"id":1828,"date":"2023-03-06T16:11:00","date_gmt":"2023-03-06T16:11:00","guid":{"rendered":"https:\/\/www.transitorythoughts.com\/travel\/?p=1828"},"modified":"2024-05-11T14:53:38","modified_gmt":"2024-05-11T14:53:38","slug":"chicken-stew","status":"publish","type":"post","link":"https:\/\/www.transitorythoughts.com\/travel\/2023\/03\/06\/chicken-stew\/","title":{"rendered":"Chicken Stew"},"content":{"rendered":"\n<p>Another version of a 1-pot meal using chicken.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>olive oil<\/li>\n\n\n\n<li>4 chicken thighs, skin removed, bone-in or deboned<\/li>\n\n\n\n<li>3 or 4 cloves<\/li>\n\n\n\n<li>garlic, minced or sliced<\/li>\n\n\n\n<li>1 medium onion, diced<\/li>\n\n\n\n<li>1 red pepper, cut into 2-centimeter chunks<\/li>\n\n\n\n<li>1 carrot, quartered if large, and sliced<\/li>\n\n\n\n<li>3 medium potatoes, diced into 1-cm chunks<\/li>\n\n\n\n<li>water or broth to cover<\/li>\n\n\n\n<li>1\/8 tsp oregano<\/li>\n\n\n\n<li>1 shake of meat herb mix that includes rosemary and thyme<\/li>\n\n\n\n<li>green vegetables, such as zucchini or peas or flat or string beans, cut into bite-sized pieces<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Fry onions and garlic in olive oil.<\/li>\n\n\n\n<li>Brown the chicken thighs.<\/li>\n\n\n\n<li>Add red pepper, carrot, potato, water or broth, oregano and other herbs.<\/li>\n\n\n\n<li>Bring to boil and lower to a simmer.<\/li>\n\n\n\n<li>Cook for 40 minutes, covered.<\/li>\n\n\n\n<li>If there is too much water, remove cover to reduce the liquid.<\/li>\n\n\n\n<li>For the last 5 minutes, add the green vegetables.<\/li>\n\n\n\n<li>If chicken was bone-in, shred the meat off the bones and return to the pot.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Another version of a 1-pot meal using chicken.
