{"id":708,"date":"2018-01-01T05:00:00","date_gmt":"2018-01-01T05:00:00","guid":{"rendered":"https:\/\/www.transitorythoughts.com\/travel\/2018\/01\/01\/mango-cucumber-tabouli\/"},"modified":"2022-08-05T16:35:10","modified_gmt":"2022-08-05T16:35:10","slug":"mango-cucumber-tabouli","status":"publish","type":"post","link":"https:\/\/www.transitorythoughts.com\/travel\/2018\/01\/01\/mango-cucumber-tabouli\/","title":{"rendered":"Mango Cucumber Tabouli"},"content":{"rendered":"\n<p>Tabouli is delicious, but it&#8217;s fun to get that tangy, grain salad texture with different ingredients.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<p>\u00be c. fine bulgur<br>\u00bd c. water<br>Combine bulgur and water and refrigerate for at least an hour.<\/p>\n\n\n\n<p>\u00bd tsp. salt<br>1\/3 c. vidalia onion, diced<br>1 large cucumber, peeled, if skin is tough, and diced<br>1 large mango, nicely ripe, peeled and cut in chunks<br>juice of \u00bd lemon<br>water added to lemon juice to make 3\/8 c.<br>parsley &amp; cilantro, chopped, 1 to 3 tbsp, to taste<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Directions<\/h3>\n\n\n\n<p>Combine ingredients and refrigerate for at least another hour to fully hydrate the bulgur. It is even better the next day as the flavors blend.<\/p>\n\n\n\n<p>This recipe is based on a traditional tabouli recipe. Many variations could work just as well. Consider:<br>&#8211; chunks of avocado<br>&#8211; diced green or red pepper<br>&#8211; mint<br>&#8211; chopped pecans or walnuts or pine nuts<br>&#8211; chopped sour apple (tasted good when I didn\u2019t have enough lemon juice)<br>&#8211; feta or other cheese, crumbled<\/p>\n\n\n\n<p>Makes about 3 cups.
