{"id":713,"date":"2016-12-09T19:53:15","date_gmt":"2016-12-09T19:53:15","guid":{"rendered":"https:\/\/www.transitorythoughts.com\/travel\/2016\/12\/09\/squash-soup\/"},"modified":"2022-08-05T16:28:47","modified_gmt":"2022-08-05T16:28:47","slug":"squash-soup","status":"publish","type":"post","link":"https:\/\/www.transitorythoughts.com\/travel\/2016\/12\/09\/squash-soup\/","title":{"rendered":"Squash Soup"},"content":{"rendered":"\n<p>Pam loves variations on winter squash. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><b>Ingredients<\/b><\/h3>\n\n\n\n<p>2 quarts Turkey broth<\/p>\n\n\n\n<p>1 whole Squash, baked, seeded and removed from skin <br>(I used an acorn squash)<\/p>\n\n\n\n<p>1 &#8211; 2 cups rice blend <br>(I used a Trader Joe\u2019s mix with radish seeds and brown rice)<\/p>\n\n\n\n<p>1 pkg SoyBoy Tofu, Caribbean flavor, diced into \u00bc to \u00bd inch chunks<\/p>\n\n\n\n<p>1 onion, chopped<\/p>\n\n\n\n<p>1 large garlic clove, minced<\/p>\n\n\n\n<p>1 tsp powdered ginger<\/p>\n\n\n\n<p>\u00bd tsp paprika<\/p>\n\n\n\n<p>\u00bd tsp powdered mustard<\/p>\n\n\n\n<p>1 tsp salt (adjust according to saltiness of broth)<\/p>\n\n\n\n<p>2 cups cauliflower, cut into small pieces<\/p>\n\n\n\n<p>1 orange, peeled and diced<\/p>\n\n\n\n<p>For a thicker soup, add:<\/p>\n\n\n\n<p>1 portion angel hair pasta<br>(I used a brown rice variety)<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><b>Directions<\/b><\/h3>\n\n\n\n<p>In 1 quart of turkey broth, cook the rice.<\/p>\n\n\n\n<p>In soup pot, saute onions and garlic. Add rest of broth and squash and cook for a while. Using a stick blender, blend until smooth.<\/p>\n\n\n\n<p>Add tofu, cauliflower, orange and spices. Cook until cauliflower is tender.<\/p>\n\n\n\n<p>When rice is al dente, add angel hair, if desired, to rice (which still has a lot of unabsorbed broth). Let stand until soft.<\/p>\n\n\n\n<p>Add rice and pasta to the main pot. Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pam loves variations on winter squash.
